Saturday’s Recipe: Springtime Pea and Peanut Salad

 Here is a refreshing pea salad for Spring with lots of crunch and color!  It’s great served with a ham.
Pea and Peanut Salad
1 package (10 ounces) frozen peas, thawed and drained
1 can (7 or 8 ounces) whole kernel corn, drained
1/2 cup chopped crispy-cooked bacon
1/2 cup roasted peanuts (or cashews can be substituted)
1/2 cup diced celery
1/2 cup small cubes of cheddar cheese
1/4 cup sour cream
1/4 cup finely chopped onion
Salt and freshly ground black pepper to taste
Combine all ingredients in a serving bowl and toss to combine.  Cover and refrigerate before serving.  Serves 6-8.
