Saturday’s Recipe: Easy Peanut Butter Cookies

These cookies go together in minutes.  And no butter!

Peanut Butter Cookies with White Chocolate Chips

1-1/2 cups chunky peanut butter
1 cup granulated sugar
2 egg whites, unbeaten
2/3 cup white chocolate chips

Heat oven to 350 degrees.  In a mixing bowl, stir together peanut butter and sugar until blended.  Add egg whites and mix thoroughly.  Stir in chocolate chips.  Roll into walnut-sized balls and place on ungreased cookie sheet; flatten tops criss-cross style with a fork.  Bake for 10 minutes or until golden.   Let cookies rest on sheet for a few minutes, then transfer to a wire rack to cool.
