Saturday Recipe: Salad with Creamy Garlic Dressing, Cherry Tomatoes, and Avocado

I love this salad!  It’s great served with grilled meats, pasta, or even just on its own.  It’s sort of like a jazzed up Caesar Salad, and will use your summer cherry tomatoes.

SALAD WITH CREAMY GARLIC DRESSING, CHERRY TOMATOES, AND AVOCADO

1 large head romaine lettuce
2 cloves garlic, minced or pressed
1/2 teaspoon salt
1 Tablespoon lime or lemon juice
1 egg
1/3 cup mayonnaise
2 teaspoons Worcestershire sauce or soy sauce
3 Tablespoons grated Parmesan cheese
1 cup cherry tomatoes, cut in halves
1 avocado, peeled, pitted, and diced
2 green onions, thinly sliced
2/3 cup seasoned croutons

1.  Wash lettuce, dry well, and tear into bite-sized pieces.  (you will need about 3 quarts of torn greens.  Chill well.
2.  In a bowl, mash garlic and salt together into a paste; mix in the lime juice. 
3.  Add the egg and beat until foamy.  Stir in the mayonnaise and Worcestershire.  Cover and chill if made ahead.
4.  In a large salad bowl combine the romaine, Parmesan, tomatoes, avocado, green onion, and croutons.  When ready to serve, pour garlic dressing over greens and toss together until mixed.  Serves 6-8.
