Justin Wilson: Louisiana Humorist and Chef (and this week’s cookbook giveaway!)

Justin Wilson and his syndicated television series still makes people smile.  It is long gone from the airwaves, but everyone who watched remembers his unique Cajun culture and food of South Louisiana.  The cookbook is filled with authentic Cajun recipes with sprinklings of Justin’s distinctive humor.  Recipes include “Cajunized” Mexican cornbread, a turnip casserole with shrimp, chili with crawfish, hot crab dip, quail in peach brandy sauce, barbecued oysters,  a variety of jambalayas and gumbos, and if you dare, alligator tail in a smoke cooker. 

This is how we remember Justin Wilson, with his signature red suspenders and tie.  He looks like a Southern colonel whose eyebrows dance when he talks.  He was an original who entertained with his cooking, and especially his stories.  Justin was recognized as an ambassador for Cajun culture, and in addition to his cookbooks, he recorded more than a dozen albums of his unique humor.

    Oh, I just LOVED Justin! He was too cute, and he showed that cooking was easy and fun long before the Food Network came along. I used to make a really quick, simple dish of his — sausage cooked in wine, served over rice. Gonna have to do that again … it’s been years! Thanks for reminding me … 🙂

        Eddie, you can probably find a copy of Justin’s books on ebay, amazon, or other online sites, and I have sometimes seen them at used book stores, book sales, and antique stores. He was very popular so I bet you will be able to find some. Good luck!

    I watched him for years . I use a lot of his recipes now. I love his collard green soup recipe Thanks Carl.
