No Bake "Cousin" Cookies
  • 2 cups granulated sugar
  • ½ cup unsalted butter (1 stick)
  • ½ cup milk
  • 4 Tablespoons unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ½ cup creamy peanut butter (not the "natural" type)
  • 3 cups quick-cooking oatmeal (not instant)
  1. Line two cookie sheets with parchment or waxed paper; set aside.
  2. Place sugar, butter, milk, cocoa powder, and salt in a medium saucepan. Heat over medium heat and stir to combine ingredients. Bring to a boil, then boil for a little over a minute until it begins to thicken.
  3. Turn off heat and quickly stir in vanilla and peanut butter until blended. Stir in oatmeal until combined.
  4. Drop by spoonfuls onto prepared baking sheets. Place in refrigerator to harden. Store in airtight containers or in the refrigerator. The cookies can also be frozen.
