Finnish Ginger Cookies

Ingredients
  • ¼ cup butter, softened
  • ¼ cup packed dark brown sugar
  • ¼ cup whipping cream
  • ¼ cup molasses
  • 1-1/2 teaspoons ground ginger
  • 1-1/2 teaspoons ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1-1/2 to 1-3/4 cups all-purpose flour
Instructions
  1. Mix butter, sugar, cream, and molasses in mixing bowl. Stir in remaining ingredients; cover. Refrigerate at least 3 hours.
  2. Heat oven to 375 degrees. Divide dough into 4 parts. Roll each part ⅛-inch thick on lightly floured cloth-covered board. Cut into 2-1/2 inch circles with a scalloped cookie cutter. Place 1-inch apart on greased baking sheets or lined with parchment.
  3. Bake until light brown, about 8 minutes. Cool on wire rack. Makes about 3-1/2 dozen.
