Happy Hour Bar Nuts
Author:

Ingredients
  • 2 Tablespoons unsalted butter
  • 6 medium garlic cloves, minced (about 4-1/2 teaspoons)
  • ¼ cup plus 2 Tablespoons firmly packed light brown sugar
  • 1 Tablespoon water
  • 1 Tablespoon finely minced fresh rosemary
  • 2 teaspoons garlic salt, plus more for sprinkling
  • 2 cups walnut halves
  • 2 cups pecan halves
Instructions
  1. Preheat oven to 350 degrees. Line a rimmed baking sheet with foil or parchment.
  2. In a large saucepan, melt the butter over medium heat. Add the garlic and saute for one minute. Add the brown sugar, water, rosemary, and garlic salt, and saute, stirring constantly, until the sugar is no longer dry and the mixture is shiny and wet. Add the nuts and toss to coat.
  3. Spread the nuts on prepared baking sheet in a single layer. Bake for 8 minutes, then remove and toss nuts again. Return to oven and bake until lightly browned, about 6 minutes.
  4. Remove nuts from oven and immediately sprinkle with a little more garlic salt, then toss again, scooping up any coating left on the foil.
  5. Slide the foil onto a wire rack and allow the nuts to cool completely. Store in an airtight container.
