Greek Farro Salad for One
 
Ingredients
  • 2 teaspoons extra virgin olive oil
  • 2 teaspoons red wine vinegar
  • 1 small garlic clove, finely minced
  • ⅛ teaspoon dried oregano
  • 1 cup baby arugula
  • ½ cup cooked unpearled farro
  • ⅓ cup rinsed and drained canned chickpeas
  • ¼ cup diced red bell pepper
  • ¼ cup diced cucumber
  • ¼ cup halved cherry tomatoes
  • 2 Tablespoons crumbled feta cheese (plain or Mediterranean flavored)
Instructions
  1. Combine oil, vinegar, garlic, and oregano in a bowl.
  2. Add all remaining ingredients and toss to coat. Serve immediately. Serves 1.
