How about whole wheat pancakes for a lazy Saturday morning? They are great with some blueberries added, too.
Whole Wheat Pancakes
1-1/2 cups whole wheat flour
3 Tablespoons packed brown sugar
1 Tablespoon baking powder
3/4 teaspoon salt
1 egg, beaten
1-1/4 cups milk
3 Tablespoons canola oil, or melted butter
1. Combine flour, brown sugar, baking powder, and salt in a mixing bowl.
2. Stir in egg, milk, and oil; mix well.
3. Cook pancakes on a hot griddle and serve with maple syrup.
