Coconut Curry Brussels Sprouts

Ingredients
  • 2 pounds Brussels sprouts, trimmed and halved (about 6 cups)
  • 1 Tablespoon coconut oil
  • 1 teaspoon curry powder
  • ½ teaspoon salt
  • ¼ cup unsweetened coconut flakes
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, toss the Brussels sprouts with the coconut oil, curry powder, and salt. Spread the sprouts on a large rimmed baking sheet lined with aluminum foil, cut sides down, and roast until browned and tender, about 25 minutes.
  3. Remove the pan from the oven, add the coconut flakes and stir well. Return the pan to the oven and continue roasting until the coconut is fragrant and beginning to turn a light golden brown, about 5 more minutes. Serve immediately. Serves 4.
