Lavender Honey Scones

Ingredients
  • ¾ cup heavy cream
  • 2 Tablespoons honey
  • 1 Tablespoon dried lavender buds
  • 2-1/2 cups all-purpose flour
  • 1 Tablespoon baking powder
  • ¼ teaspoon salt
  • 6 Tablespoons cold butter, cut into small pieces
  • 1 egg, lightly beaten
  • Additional cream, to brush on scones
Instructions
  1. In a small saucepan, combine heavy cream, honey, and lavender. Warm over medium heat until mixture begins to steam, about 8-10 minutes. Pour into a bowl and chill about 30 minutes, or until cold.
  2. When ready to bake, heat oven to 400 degrees. Line a baking sheet with parchment paper or use an ungreased baking sheet.
  3. In a large bowl, combine flour, baking powder, and salt. Using a pastry blender, cut in butter until mixture forms coarse crumbs. Make a well in the center.
  4. Whisk the egg into the cooled cream mixture. Add to the flour mixture all at once and stir quickly with a fork just until moistened.
  5. Turn dough out onto a lightly floured surface and knead dough by folding and gently pressing it 10-12 strokes or until dough is nearly smooth. Pat the dough into a 10-by-4-inch rectangle. Cut in half lengthwise, and into sixths crosswise to make 12 rectangles.
  6. Place rectangles 2-inches apart on baking sheet. Brush each with additional heavy cream. Bake for 13 to 15 minutes or until golden brown. Remove scones from baking sheet. Serve warm with honey or butter. Makes 12 scones.
