Swedish Cinnamon Cookies
  • Cookies:
  • ⅔ cup butter, room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1-1/3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • Topping:
  • ½ cup walnuts, finely chopped
  • 2 Tablespoons ground cinnamon
  • 2 Tablespoons granulated sugar
  1. For cookies: Cream butter and gradually add 1 cup granulated sugar. Beat in egg and vanilla. Sift flour with baking powder and teaspoon of cinnamon. Add to egg mixture and blend thoroughly. Chill dough for 30 minutes.
  2. Heat oven to 350 degrees F. Line a large baking sheet with parchment paper (or grease and flour baking sheet).
  3. For topping: Combine walnuts, 2 Tablespoons cinnamon, and 2 Tablespoons sugar. Form the chilled dough into 1-inch balls. Roll each ball into walnut-cinnamon mixture. Place 3 inches apart on prepared baking sheet. Bake about 12 minutes or until golden. Remove cookies to wire racks to cool completely.
