Hoppin' John Squares
 
Ingredients
  • 2 Tablespoons unsalted butter
  • ½ cup chopped green pepper
  • 2 Tablespoons finely chopped onion
  • 2 Tablespoons all-purpose flour
  • ¾ teaspoon chili powder
  • ¼ teaspoon ground cumin
  • ¼ teaspoon salt
  • 1-1/4 cups whole or 2% milk
  • 1 cup shredded cheddar cheese, divided
  • 1 can (15 ounces) black-eyed peas, drained
  • 1 cup cooked brown rice
  • ¾ cup diced cooked ham
  • 2 beaten eggs
Instructions
  1. Heat oven to 350 degrees. Grease an 8-by-8-by-2-inch baking pan; set aside.
  2. Melt butter in a skillet over medium heat. Add green pepper and onion; cook and stir until softened. Stir in flour, chili powder, cumin, and salt. Add milk and stir until bubbly and mixture has thickened.
  3. Remove from heat and stir in ¾ cup of the cheese, peas, rice, ham, and beaten eggs; mix well. Spoon into prepared pan. Bake for about 35 minutes or until set.
  4. Remove from oven and sprinkle with remaining ¼ cup of shredded cheese. Let stand 5 minutes. Cut into squares and serve. Serves 6.
