Classic Finnish Salmon Soup
 
Ingredients
  • 6 potatoes
  • 2 onions
  • 8 dl water*
  • 10 whole black peppercorns
  • 1 teaspoon salt
  • 1 Tablespoon fish stock powder
  • 1 bay leaf
  • 400 g of salmon fillet, large diced
  • 2 dl cream
  • 3 Tablespoons dill
  • *Note: Sorry, this is how the recipe is written. It is a Finnish cookbook after all! I have no idea how much water is 8 deciliters!
Instructions
  1. Peel and chop the potatoes and onions. Cook with the seasoning and herbs until almost ready. Remove the skin and bones from the salmon fillet and cut into large cubes. Add the cream and fish and cook on a medium heat for about five minutes. Add the dill and serve with toasted rye bread. Serves 4.
