Easter Morning Nutmeg Muffins
 
Ingredients
  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 1 Tablespoon baking powder
  • 1-1/2 Tablespoons freshly grated nutmeg
  • ½ teaspoon salt
  • 1 large egg, at room temperature
  • ¾ cup heavy cream
  • ¾ cup whole milk
  • 5 Tablespoons unsalted butter, melted and cooled
Instructions
  1. Heat oven to 400 degrees F. Butter a 12-cup muffin pan.
  2. In a large mixing bowl, stir together flour, sugar, baking powder, nutmeg, and salt.
  3. In a small mixing bowl, whisk together the egg, cream, milk, and melted butter.
  4. Stir the cream mixture into the flour mixture until the batter is just combined. Divide the batter evenly among the prepared muffin cups.
  5. Bake for 15 to 20 minutes or until the muffins are pale golden and a tester comes out clean when inserted in the middle. Remove from oven, let rest a couple minutes, then turn out of pan onto wire rack. Serve warm. Makes 12 muffins.
