Chicken Pecan Quiche
 
Ingredients
  • 2 cups finely chopped cooked chicken
  • 1 cup freshly grated Monterey Jack cheese
  • ¼ cup chopped green onions
  • 1 Tablespoon chopped fresh parsley
  • ½ cup all-purpose flour
  • 1 unbaked 9-inch pie shell
  • 3 eggs, beaten
  • 1-1/4 cups half-and-half
  • ½ teaspoon brown spicy mustard
  • ½ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • ⅓ cup chopped pecans
Instructions
  1. Heat oven to 325 degrees F.
  2. In a large bowl combine chicken, cheese, green onions, parsley, and flour. Toss to mix then sprinkle into the pie shell.
  3. In a medium bowl whisk together the eggs, half-and-half, mustard, salt, and pepper. Pour over the chicken mixture and sprinkle with the chopped pecans.
  4. Bake at 325 for about 55 minutes or until the quiche is cooked in the center. Remove from oven and let rest 5-10 minutes before cutting into slices. Serves 6.
