Freezer Pickles

Ingredients
  • 2 quarts cucumber slices, sliced as desired with skin on
  • 2 medium onions, sliced thin
  • 2 teaspoons pickling salt
  • Ice cubes, as needed
  • 1-1/4 cups white vinegar
  • 1-1/4 cups sugar
Instructions
  1. Combine cucumbers, onions, and pickling salt. Let stand for 2 or more hours with ice cubes on top.
  2. Heat vinegar and sugar; stir to dissolve sugar and let cool.
  3. Drain excess liquid from cucumber mixture. Pour vinegar-sugar mixture over cucumbers. Mix well and pack into freezer containers.
  4. Freeze and allow to sit at least 2 weeks before defrosting and using. Refrigerate after opening.
