Freezer Pickles

- 2 quarts cucumber slices, sliced as desired with skin on
- 2 medium onions, sliced thin
- 2 teaspoons pickling salt
- Ice cubes, as needed
- 1-1/4 cups white vinegar
- 1-1/4 cups sugar
- Combine cucumbers, onions, and pickling salt. Let stand for 2 or more hours with ice cubes on top.
- Heat vinegar and sugar; stir to dissolve sugar and let cool.
- Drain excess liquid from cucumber mixture. Pour vinegar-sugar mixture over cucumbers. Mix well and pack into freezer containers.
- Freeze and allow to sit at least 2 weeks before defrosting and using. Refrigerate after opening.
