Fifteen Minute Shortbread
 
Ingredients
  • 1-1/4 cups all-purpose flour
  • ½ cup sugar
  • ½ cup unsalted butter, softened (No Substitute!)
  • ¼ cup sliced blanched unsalted almonds
  • ¼ teaspoon table salt
Instructions
  1. Combine all ingredients in a food processor fitted with the chopping blade. Process until the dough is smooth and starts to stick together.
  2. Remove dough to a work surface and form into a ball with your hands.
  3. Press the dough evenly into an 8-inch square glass dish, or a 9-1/2 inch glass pie plate. (I use Pyrex).
  4. Microwave on high for 4 minutes for the square dish, or 4 minutes, 15 seconds for the pie pan. The top will feel dry.
  5. Remove pan from microwave and set on a cooling rack for exactly five minutes. Cut into squares (or wedges if using the pie plate), and remove pieces to the wire rack to cool. They can be dusted with powdered sugar or left plain, as desired. Makes 16 squares or 8 wedges.
