Coctel de Aguacate
  • 1 large ripe tomato, peeled and seeded
  • 2 jalapeƱos or serrano or habanero chiles, stemmed and seeded
  • 1 small white onion
  • 12 to 15 cilantro sprigs
  • Juice of 1 lime
  • 2 Tablespoons olive oil
  • 2 large, firm but ripe Mexican avocados, such as Hass or Fuerte
  1. Chop the tomato, chiles, onion, and cilantro very fine.
  2. In a medium bowl, whisk together the lime juice and olive oil. Add the chopped ingredients and stir well.
