Coctel de Aguacate

- 1 large ripe tomato, peeled and seeded
- 2 jalapeƱos or serrano or habanero chiles, stemmed and seeded
- 1 small white onion
- 12 to 15 cilantro sprigs
- Juice of 1 lime
- 2 Tablespoons olive oil
- 2 large, firm but ripe Mexican avocados, such as Hass or Fuerte
- Chop the tomato, chiles, onion, and cilantro very fine.
- In a medium bowl, whisk together the lime juice and olive oil. Add the chopped ingredients and stir well.
