"Cabin Brownies" aka Fudgy Brownies
  • 2 sticks (1/2 pound) unsalted butter
  • 2 ounces unsweetened chocolate squares
  • 4 eggs, room temperature
  • 2 cups granulated sugar
  • 1 cup all-purpose flour, sifted
  • pinch of salt
  • 2 teaspoons vanilla extract
  • ½ cup chopped pecans, optional
  1. Heat oven to 350 degrees F. In a saucepan over low heat, melt together the butter and chocolate.
  2. Add eggs, one at time, beating after each addition.
  3. Stir in sugar and mix well to combine.
  4. Add flour and salt and mix until no trace of flour is seen.
  5. Remove from heat and stir in vanilla. and nuts if using.
  6. Scrap into a lightly greased 9-inch square baking pan. Bake for about 30-35 minutes or until done, but do not over bake. Let cool completely on a wire rack before cutting into squares. You can serve as is, dusted with powdered sugar, or ice with your favorite chocolate frosting.
