Blue Cornmeal Raspberry Waffles

Ingredients
  • 1 cup Bow & Arrow Blue Cornmeal
  • 1 cup all-purpose flour
  • 3 Tablespoons granulated sugar
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 large eggs
  • 1-1/3 cups buttermilk
  • 4 Tablespoons melted butter
  • 6 ounce container fresh raspberries
Instructions
  1. Preheat waffle iron and prepare per waffle iron directions.
  2. Thoroughly mix dry ingredients in medium bowl.
  3. Thoroughly mix wet ingredients in a large bowl.
  4. Fold dry ingredients into wet ingredients. Mix until just combined. Don't overmix.
  5. Gently fold in raspberries.
  6. Cook waffles according to your waffle iron instructions.
