Herb-Roasted Nuts

Ingredients
  • 1-1/2 cups whole almonds
  • 1 cup pecan halves
  • 1 cup walnut halves
  • ½ cup whole cashews
  • ½ cup hazelnuts
  • ½ cup whole shelled pistachios
  • ½ cup pure maple syrup
  • 3 Tablespoons olive oil
  • ¼ teaspoon cayenne pepper
  • 1-1/2 teaspoons chopped fresh oregano leaves (or ½ teaspoon dried)
  • 1-1/2 teaspoons chopped fresh sage leaves (or ½ teaspoon dried)
  • 1-1/2 teaspoons chopped fresh thyme leaves (or ½ teaspoon dried)
  • 1-1/2 teaspoons chopped fresh rosemary leaves (or ½ teaspoon dried)
  • 1-1/2 teaspoons chopped fresh summer savory leaves (or ½ teaspoon dried)
  • 1 teaspoon sea salt
Instructions
  1. Heat oven to 300 degrees F. Have a 10-by-15-inch rimmed baking sheet set aside.
  2. Mix all ingredients together except for the salt, in a very large bowl. Toss and stir until all the nuts are well coated. Pour and scrape onto the baking sheet and spread evenly. Sprinkle evenly with the salt.
  3. Bake for about 45 minutes, stirring occasionally, until all the liquid is evaporated and nuts are golden. Let cool. Taste and add more salt, if needed.
