Creamy Mustardy Pork

Ingredients
  • 1 (10 ounce) pork tenderloin
  • ½ pound mixed mushrooms
  • 1 heaping Tablespoon grainy mustard
  • 2 heaping Tablespoons crème fraiche
  • 1-1/2 ounces arugula
Instructions
  1. Slice the pork into 6 medallions, flattened slightly, and roughly slice the mushrooms. Place a large non-stick frying pan on a high heat. Add 1 Tablespoon of olive oil, then the pork and mushrooms. Cook pork for 2 minutes per side, and stir the mushrooms until golden. The pork will be just cooked through. Remove just the mushrooms to a plate.
  2. Stir in the mustard and crème fraiche and cook with the pork for 1 minute, adding a splash of water if needed. Taste and season with sea salt and pepper. Divide between two plates, then scatter the mushrooms and arugula over the pork. Finish with a drizzle of olive oil if you like, and serve. Serves 2.
