Craig Claiborne's Oatmeal-Raisin Cookies
 
Ingredients
  • 1 cup sifted flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground allspice
  • ¾ cup unsalted butter, at room temperature
  • 1 cup packed dark brown sugar
  • 1 egg, lightly beaten
  • ⅓ cup buttermilk
  • ¾ cup quick-cooking oatmeal (not instant)
  • ½ cup dark raisins
  • ¾ cup coarsely chopped pecans
Instructions
  1. Preheat oven to 350 degrees. Sift together dry ingredients; set aside.
  2. Cream together the butter and brown sugar in bowl of electric mixer until light and fluffy. Add egg and beat well.
  3. Fold in the flour mixture alternately with the buttermilk. Fold in oats, raisins, and pecans.
  4. Drop about 2 Tablespoons at a time, about 2-inches apart, onto a lightly greased cookie sheet. Flatten each cookie with your fingers.
  5. Bake for about 10 minutes or until browned. Remove from oven and rest on cookie sheet for a couple minutes before removing to wire rack to cool completely.
