A Special Daiquiri for Summer

Plums are now are at their peak of perfection.  Besides providing incomparable refreshment straight from the refrigerator, plums add a natural sweetness to a variety of edibles, including this quick and cooling daiquiri.  Plums are the most widely grown of the stone fruits.  They ripen quickly, so it’s easy to keep them on hand. 

Fresh Plum Daiquiri

1/2 cup Plum-Daiquiri Sauce (recipe follows)
1-1/2 ounces light rum
5 ice cubes
Lime juice, to taste

Plum wedge
Mint sprig

Make Plum-Daiquiri sauce.  For each drink, process 1/2 cup sauce, rum, ice cubes, and lime juice to taste in blender until smooth, about 1 minute.  Pour into glass. Garnish with a plum wedge and mint sprig.  Makes 1 drink.

Plum-Daiquiri Sauce:
2 pounds fresh plums, pitted and sliced
1 cup sugar

Heat plums and sugar in a saucepan over medium heat, stirring constantly, until sugar dissolves.  Heat to boiling; reduce heat.  Simmer, uncovered, until plums are tender, about 3 minutes.  Cool. Refrigerate.   Makes about 1 quart.
