Grilled Lamb Chops with Pepper-Herb Crust

These are so fabulous!  You can rub the herb mixture over the chops in the morning, cover them with plastic wrap, and they are all ready to grill for dinner! 

Grilled Lamb Chops with Pepper-Herb Crust

1 Tablespoon freshly ground black pepper
1 teaspoon dried thyme
1 teaspoon sweet paprika
3/4 teaspoon salt
1/2 teaspoon dried mint
Pinch of cayenne pepper
4 large or 8 small lamb chops

1.  In a small dish, stir together pepper, thyme, paprika, salt, mint, and cayenne pepper.  Rub over both sides of lamb chops.  Place chops in a shallow glass baking dish; cover and refrigerate at least one hour.
2.  Prepare a grill for medium-hot coals.  Grill the lamb chops, turning once, about 4-5 minutes per side for medium-rare, or as desired.  Serve hot.  Makes 4 servings.  (I love to serve these with polenta!)
