Happy Birthday to My Kara!! (and her favorite snack recipe!)

My husband’s birthday was just a few days ago, and now it’s my baby Kara’s turn!  As you can see, she’s not a baby anymore.  Kara has grown up to be a beautiful woman, inside and out.  We are more proud of her than I can say.

Love the toothless look!  I always loved the bottom photo of Kara looking up and dreaming.  She is still the same way, except the dreams are even bigger now.

Of course, I have a million more photos, but you get the idea!  Kara is very much loved.  I know she would want me to give you this recipe, as it is her favorite snack.  Kara is into everything healthy, organic, and fresh.  She says she can never make enough of these:

Kara’s Kale Chips

Fresh kale, torn into bite-sized pieces
Olive oil
Coarse sea salt

Heat oven to 350 degrees.  Wash kale and dry thoroughly.  Spread kale on a large baking sheet lined with parchment paper.  Spritz kale lightly with olive oil and toss.  Bake for about 12 minutes, or until kale is very crispy.  Remove from oven and sprinkle with sea salt.   Eat while warm.  They are like crispy potato chips, but better for you!
