Isn’t it fun to have Thanksgiving leftovers all weekend? I can even eat pumpkin pie for breakfast, but don’t tell anyone. Here are a few ideas for using leftover turkey, and you don’t even need a recipe!
-Mix some leftover cranberry sauce with a little Dijon mustard and spread it on your favorite bread for a sandwich. Layer with turkey slices, lettuce, and crispy bacon.
-In a skillet, saute some strips of green and red bell peppers, sliced onion and chopped garlic until soft. Add some cooked turkey strips and heat through. Sprinkle in some chili powder and ground cumin to taste. Spoon mixture into warm flour tortillas and roll up. Serve salsa and sour cream for dipping.
-Place some sliced turkey on a lightly toasted bagel or English muffin. Top with thinly sliced cheddar cheese and broil until cheese melts. Top with some thinly sliced apples or a dollop of leftover cranberry sauce and serve open-faced.
-In a skillet, saute a chopped onion and a couple minced garlic cloves in olive oil. Add one can of rinsed and drained black beans and some turkey strips. Stir in a little salsa to moisten, then spoon into a flour tortilla and roll up. Serve with more salsa or sour cream.
last night my son created a new Thanksgiving leftover appetizer. He took a twice-baked baked potato-hollowed out some of the potato and then filled it with leftover turkey, cranberry sauce, stuffing and gravy–ate it in a couple of big bites
