Here is another idea for turkey leftovers. I make this salad every year and still love it!
CURRIED TURKEY SALAD WITH GRAPES AND TOASTED ALMONDS
2 cups leftover cooked turkey, cut into strips
1/2 cup halved red seedless grapes
1/2 cup toasted slivered almonds
1/2 cup thinly sliced celery
1/4 cup sliced green onion
1 cup mayonnaise
1/3 cup chopped Major Grey’s Chutney
1 Tablespoon curry powder
Salt and pepper to taste
1. Place turkey, grapes, almonds, celery, and green onion in a serving bowl.
2. In a small bowl, stir together mayonnaise, chutney, and curry powder until well-blended.
3. Stir mayonnaise mixture into turkey mixture until all ingredients are coated. Taste for salt and pepper.
You can serve the salad on a bed of lettuce, or even use as a sandwich filling. You can toss in some dried cranberries if you like, too.
