Sunday’s Recipe: Cajun Blackening Seasoning Mix

This spicy seasoning mix is great rubbed on fish, chicken, steaks, ribs, or even sprinkled into scrambled eggs.  It is much less expensive than buying the gourmet type blackening seasoning, and will keep for a long time stored in the refrigerator or freezer.  It will make about a half cup of mix.

Cajun Blackening Seasoning Mix

1-1/2 Tablespoons paprika
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon ground dried thyme
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon dried basil
1 teaspoon dried oregano

Combine all the spices in a bowl and mix until evenly blended.  Store in an airtight container in a cool, dry place; or you can refrigerate or freeze it for longer storage.
