Halloween Chowder for the Little Goblins

When the kids come back from Trick-or-Treating tomorrow night, and before they dive into the much-anticipated candy, how about a nice warm bowl of soup for them?  It’s creamy and cheesy with corn, carrots, and potatoes – all things that kids love!

Autumn Chowder to Warm Up on a Spooky Night!

6 slices bacon, chopped
1 cup chopped onions
1 cup water
2-1/2 cups pared, diced potatoes
1 cup chopped carrots
2 teaspoons instant chicken bouillon
3 cups milk
2 cans (15 ounces each) whole kernel corn, drained
1/8 teaspoon white pepper
3 cups shredded cheddar cheese
3 Tablespoons all purpose flour

1.  Partially cook bacon in a 4-quart Dutch oven.  Stir in onions and cook until bacon is crisp.  Stir in water, potatoes, carrots, and bouillon.  Heat to boiling; reduce heat and cover.  Simmer until potatoes are tender, about 15 to 20 minutes. 

2.  Stir in milk, corn, and pepper.  Heat to simmering.  Toss together cheese and flour; add to soup mixture, stirring constantly until cheese is melted.   Makes 8 servings.
