Prime Rib for a Holiday Crowd

Prime rib is as easy as roasting a turkey.  This recipe will serve 20 guests, so if you have a crowd coming for the holidays, think about trying a rib roast. 

Roast Prime Rib of Beef

1 standing rib roast, about 14 pounds
2 cloves garlic, cut in half
Salt
Pepper

Heat oven to 450 degrees.  Rub meat and bones with garlic; season with salt and pepper.  Insert a meat thermometer so tip is in center of thickest part of meat, away from the bone.  Place meat rib side down on rack in roasting pan.  Bake for 15 minutes, then reduce heat to 350 degrees.  Bake until meat thermometer registers 125 degrees, about 2 hours.  Remove from oven.  Let stand covered with foil for 20 minutes before serving.  Makes 20 servings.

    I think I will be doing this for our annual Cousins – Valentines event in February. Thanks for the easy recipe. It will be so elegant. What do you serve with? (not sure why my Google Account isn’t coming up)

    Lisa, I don’t know why sometimes the google account name doesn’t show up. I’ve heard that before from other people, too.
    You’re right about the recipe being easy – and so good! It’s wonderful with some garlic mashed potatoes, and mushrooms cooked in wine; then maybe a chocolate dessert.
