If you happen to be grilling fish this holiday weekend, here is a wonderful butter to serve with it. It’s good with fish such as scrod or haddock, or any mild-flavored fish fillet.
Saffron Butter
1 Tablespoon plus 1-1/2 teaspoons anise-flavored liqueur
1 small pinch (about 15 threads) saffron, crumbled
4 Tablespoons unsalted butter, softened
1 small clove garlic, lightly crushed
2 teaspoons fresh lemon juice
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Pinch of cayenne pepper
1. Place liqueur and saffron in a small bowl; let stand 10 minutes.
2. Place butter, garlic, and liqueur-saffron mixture in food processor with metal blade. Process until garlic is minced. Add lemon juice, salt, pepper, and cayenne; process until well blended.
3. Dot butter over hot, grilled fish fillets.
