Saturday’s Recipe: An Avocado Dip for Father’s Day tomorrow!

Here is a great dip to make for Dad tomorrow!  He will love it served with some corn chips while relaxing on his special day.
Avocado Dip

1-1/2 cups mashed ripe avocados, about 2 medium
2 teaspoons grated onion
1 Tablespoon lemon juice
1/2 cup chopped peeled tomato
1/4 cup dairy sour cream
1 teaspoon salt, or more to taste
1 teaspoon chili powder or chipotle chili powder (or more, if desired)
1/8 teaspoon ground coriander
Few drops (or more!) hot sauce

Place mashed avocados in a small serving bowl and stir in all remaining ingredients; mix well.  Cover with plastic wrap placed and pushed down directly on surface to prevent darkening.  Chill at least 2 hours.  Taste for seasoning.  You can make it as spicy as you want!  Serve with corn chips or tortilla chips.  Makes about 2 cups.
