


Chewy Gooey Crispy Crunchy

Ingredients
- 3 cups unbleached all-purpose flour
- 2 teaspoons Cream of Tartar
- 1 teaspoon baking soda
- ½ teaspoon table salt
- ½ pound unsalted butter, softened
- 1-1/2 cups plus 2 Tablespoons granulated white sugar
- 2 large eggs
- 2 teaspoons ground cinnamon
Instructions
- Combine the flour, cream of tartar, baking soda, and salt in a bowl and mix with a whisk or fork; set aside.
- In bowl of electric mixer cream the butter and 1-1/2 cups of the sugar until smooth and creamy. Beat in eggs just until blended. Add the flour mixture and beat on low speed just until incorporated. Gather the dough into a ball and wrap in plastic wrap. Refrigerate until firm, at least 30 minutes.
- Preheat oven to 400 degrees F. Mix the remaining 2 Tablespoons sugar and the cinnamon in a small bowl. Form pieces of dough into 1-inch balls and roll in the cinnamon-sugar. Place 2-inches apart on lined or lightly greased cookie sheets.
- Bake for 10 minutes or until the cookies puff and begin to settle down. Remove from oven and let cookies sit for a minute, then remove to a wire rack to cool completely. Store in an airtight container.
