Glazed Poppy Seed Bread

When my daughter Kristina dropped by this weekend, I was sorting through recipes from my card catalog.  She started looking through them and pulled out a recipe for a poppy seed bread with a glazed topping and thought it sounded good, especially since there was almond extract, which she loves, both in the bread and glaze.  I had all the ingredients so the baking began!

The loaves turned out gorgeous and wonderful. We loved the crunchiness of the glaze, and the bread had a texture like a pound cake.  We enjoyed the loaves all weekend.  Definitely a keeper recipe. It was great both with coffee in the morning, and with a scoop of ice cream for a dessert.


Glazed Poppy Seed Bread
 
Ingredients
  • For Bread:
  • 3 eggs
  • 2-1/2 cups granulated white sugar
  • 1 cup plus 1 Tablespoon canola or vegetable oil
  • 1-1/2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 2 Tablespoons poppy seeds
  • 3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons salt
  • 1-1/2 cups milk
  • For Glaze:
  • 2 Tablespoons melted butter
  • ¾ cup granulated white sugar
  • ½ teaspoon almond extract
  • ½ teaspoon vanilla extract
  • ¼ cup orange juice
Instructions
  1. Heat oven to 350 degrees F. Grease two 9-by-5-inch loaf pans; set aside.
  2. For the bread, mix eggs, sugar, oil, almond and vanilla extracts, and poppy seeds in bowl of electric mixture until blended. In another bowl stir together flour, baking powder, and salt, and add this to egg mixture alternately with milk, beginning and ending with flour mixture until just blended. Pour mixture into prepared loaf pans. Bake for about 1 hour or until a skewer inserted in the middle comes out clean. Remove from oven and place on wire racks to cool slightly.
  3. For Glaze: Combine all glaze ingredients in a small saucepan. Simmer and stir until sugar dissolves and melts in. While loaves are still warm, prick all over with a skewer and spoon or brush glaze evenly over each loaf. Let glazed loaves cool completely in pans before removing. Cut into slices to serve. Loaves will keep for several days wrapped in plastic or they can be frozen.
