Super Bowl Munch

The Super Bowl is just around the corner.  If you are a football fan or have a spouse who is, start thinking of what you would like to serve for munchies.  This is one of my husband’s favorite snacks to enjoy while watching the game.  Many snack mixes are baked, but this one is done easily in the microwave and everything stays crunchy.

Mexican Munch 1

Super Bowl Munch

1/2 cup butter
1 Tablespoon taco seasoning mix  (from a packet)
2 cups regular size Fritos Corn Chips
2 cups Corn Chex
1 cup Rice Chex
1 cup peanuts
2 cups pretzel sticks

Place the butter in a glass measuring cup and microwave on high for 1 minute, or until butter is melted.  Stir in the taco seasoning mix and set aside.

Combine the Fritos, Corn Chex, Rice Chex, peanuts, and pretzels in a 9-by-13-inch glass baking dish.  Drizzle with the butter mixture and stir with a fork.  Microwave on high for 2 minutes.  Open the door and stir mixture with a fork.  Microwave on high for another 1 to 2 minutes, or until heated through.  Remove from microwave and let mixture cool before serving.  Store any leftovers in a plastic bag or container.  Makes about 8 cups.
