Happy 4th of July weekend!
If you happened to see my blog from yesterday, I mentioned a delicious fresh herb homemade mayonnaise that we served with salmon at our granddaughter’s birthday party. If you happen to be grilling salmon or other fish, or hamburgers for the holiday, this is the perfect sauce to serve with them. It has lemon, Dijon mustard, fresh basil, dill, and parsley with a touch of cayenne.

It will keep fresh for several days, and with any leftovers, you can use it for tuna salad, chicken salad, pasta salad, or potato salad. I can’t tell you enough how good it is and easy to make.
- 2 eggs
- 3 Tablespoons packed minced fresh basil
- 3 Tablespoons packed minced fresh dill
- 2 Tablespoons packed minced fresh parsley
- 2 Tablespoons Dijon mustard
- 1 Tablespoon fresh lemon juice
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon table salt
- ⅛ teaspoon freshly ground black pepper
- 1 cup vegetable or canola oil
- Place all ingredients except for oil in a blender. Process until well blended. With machine running, gradually add oil through the feed tube in a steady, slow stream. Blend well. Transfer to a bowl, cover and refrigerate. Can be prepared 3 days ahead. So good on fish, hamburgers, and also can also be used for tuna salad, chicken salad, pasta salad, or potato salad.
