At any gathering, a bowl of delicious roasted nuts are always a hit. These are a step above the usual mixed nuts found in grocery stores. There are six different varieties of nuts plus the addition of fresh herbs and maple syrup.
For the Super Bowl on Sunday this is a very special mixture that can be made a couple days ahead and kept in a covered tin or airtight container until game day. They can even be frozen for up to a month.
I love this combination of nuts but feel free to substitute your favorites for some of them, however, I highly recommend keeping the whole pecans and walnuts; they are wonderful paired with all the herbs and maple syrup. If you don’t want to use fresh herbs, dried ones can be substituted in lesser amounts, or do a combo.

- 1-1/2 cups whole almonds
- 1 cup pecan halves
- 1 cup walnut halves
- ½ cup whole cashews
- ½ cup hazelnuts
- ½ cup whole shelled pistachios
- ½ cup pure maple syrup
- 3 Tablespoons olive oil
- ¼ teaspoon cayenne pepper
- 1-1/2 teaspoons chopped fresh oregano leaves (or ½ teaspoon dried)
- 1-1/2 teaspoons chopped fresh sage leaves (or ½ teaspoon dried)
- 1-1/2 teaspoons chopped fresh thyme leaves (or ½ teaspoon dried)
- 1-1/2 teaspoons chopped fresh rosemary leaves (or ½ teaspoon dried)
- 1-1/2 teaspoons chopped fresh summer savory leaves (or ½ teaspoon dried)
- 1 teaspoon sea salt
- Heat oven to 300 degrees F. Have a 10-by-15-inch rimmed baking sheet set aside.
- Mix all ingredients together except for the salt, in a very large bowl. Toss and stir until all the nuts are well coated. Pour and scrape onto the baking sheet and spread evenly. Sprinkle evenly with the salt.
- Bake for about 45 minutes, stirring occasionally, until all the liquid is evaporated and nuts are golden. Let cool. Taste and add more salt, if needed.
